The prices of vanilla have been very volatile lately because of the problems with supply as vanilla production countries were hit by major storms and more recently demand by major players in the flavor industry jumping ship and switching over from the last great natural “queen of flavors” to low quality synthetic vanillin. Over 90% of the vanilla flavor industry is now synthetic and it is regrettable that the industry is motivated by “the bottom line” and decided to sacrifice quality, flavor and the health benefits of consuming nutritional natural products for artificial and “waste products” that resemble natural flavors.
